Pickled turnip is not unlike sauerkraut. In German it is called sauerrüben (which make me wonder if we're putting the wrong thing is that famous sandwich!). Our take on sauerrüben is usually spicy, adding 4oz of serranos to every pound of turnip. That, salt, and time. Nothing else.

A non-spicy variety is also available (same, but without the serranos).
