First attempt, unexpected results.
Amba is a very popular sauce in Israel, often served in shawarma shops. Made from fermented green mangoes, lemon juice, and spices, it was brought to Israel by Iraqi Jews in the early 50's (or so). Legend has it that some of the Iraqi Jews worked in India, where they learned about mangoes and the main spice used for the sauce -- methi seeds (aka fenugreek).
Two things about the current batch: first, it contains olive oil so should be refrigerated soon. Second, it is supposed to be much more watery, but I didn't want to add too much water so the pH remains low, for safety. Add water (or lemon juice) to get the consistency thqt you like.
Personally, I like it on sandwiches with lot of pickles.
